Toss the bananas into the tagine and sprinkle with three-quarters of the tomato mixture. Add the stock and the bouquet, and season with salt and pepper. Cover and simmer for 30 minutes. Transfer the banana pieces to a bowl. Add the beef to the casserole and stir, then simmer for three hours. Mix remaining tomato mixture and remaining oil into soup. Add the bananas and cook for another 30 minutes. Leave the stew to rest for 10 minutes before serving.
